Founded in 1682, Blaauwklippen is one of Stellenbosch's historic wine estates, set among ancient blue granite boulders and mineral-rich mountain soils. Its Sauvignon Blanc vineyards are situated at approximately 200 and 400 metres above sea level, with careful canopy management and Vertical Shoot Positioning used to encourage the aromatic character for which the variety is known. The Blaauwklippen Sauvignon Blanc 2025 is made from 100% Sauvignon Blanc, with the grapes hand harvested and pressed quickly after arriving at the cellar. Cool fermentation at 13–17°C helps preserve the wine's fresh varietal aromas, followed by three months of extended lees contact and regular lees stirring. This adds a subtle creamy, savoury texture while keeping the wine firmly in a fresh, dry Stellenbosch style. The result is a Sauvignon Blanc that combines bright citrus and green-fruit character with a little more texture than a purely stainless-steel-driven style. It is fresh and energetic, but the lees contact gives the palate enough softness to make it particularly versatile with food.
Colour: Pale straw with a bright, youthful appearance.
Nose: Green guava, green fig and lush lemon curd lead, with fresh citrus, subtle blackcurrant leaf and mineral notes adding complexity. There is a gentle herbal character in the background rather than an overtly grassy profile.
Palate: Dry and medium-bodied, with zesty citrus and green-fruit flavours supported by lively acidity. The wine has a pleasantly creamy texture from its time on the fine lees, while mineral freshness keeps the palate focused and refreshing. Lemon and green guava remain prominent through the mid-palate, giving the wine both brightness and generosity.
Finish: Clean, fresh and persistent, with citrus zest, green fruit and a subtle mineral note lingering on the palate.
