Why Join a Wine Club?

What do eggs and wine have in common?

We know what you’re thinking… Champagne breakfast right? Not quite. Egg whites are actually used in the fining process.

 A cracking good idea, egg whites are added to wine after fermentation, the albumin in the whites (globular proteins) causes the microscopic particles in the wine to sink rapidly to the bottom of the barrel or tank, leaving the wine clear.

Chefs also use this trick to help clarify stocks, by swirling in egg whites to trap undesirable elements.
