Vergelegen is one of Stellenbosch's historic wine estates, situated near Somerset West on the slopes of the Hottentots Holland mountain range. The Wild Winds Sauvignon Blanc is sourced from the estate's highest vineyards on the Schaapenberg and lower Schaapenberg, where southerly-facing vines overlook False Bay. Strong prevailing winds naturally stress the vines while the maritime influence helps keep the vineyards cool, contributing freshness and a subtle saline character to the wine. The 2025 Sauvignon Blanc is hand-picked over an extended period before being destemmed and pressed using both inert and oxidative techniques. Fermentation takes place in stainless steel with a selection of yeasts, followed by regular lees stirring to add texture while retaining the naturally high acidity of the fruit. The result is a fresh, site-driven expression of Stellenbosch Sauvignon Blanc, with tropical fruit balanced by a flinty, mineral edge.
Colour: Bright, pale straw with a youthful green hue.
Nose: Fresh guava and honeydew melon lead the aromatic profile, with subtle citrus and a clean, mineral character adding freshness.
Palate: Dry and medium-bodied, with ripe tropical fruit at the core and a distinct flinty character. Bright acidity gives the wine energy and focus, while lees stirring adds a touch of roundness to the texture. The combination of fruit, freshness and subtle salinity keeps the palate lively rather than heavy.
Finish: Long and refreshing, with lingering guava, melon and a gently mineral, saline impression.
