Situated in Thurso, on Scotland’s far northern mainland, Wolfburn Distillery draws on the heritage of an original distillery established in the area in 1821. The modern distillery began production in 2013, reviving the Wolfburn name with a focus on traditional craftsmanship and carefully controlled whisky-making. The Wolfburn 12 Year Old is the distillery’s flagship age-statement single malt. Matured for 12 years in equal parts second-fill Oloroso sherry casks and ex-bourbon casks, it brings together two complementary influences: sherry casks contribute dried-fruit sweetness and depth, while bourbon casks add softer vanilla and oak notes. Bottled at 46% ABV, without chill filtration or added colouring, this Highland whisky offers a layered style that balances gentle smoke, honeyed malt and warming spice.
Colour: Natural golden amber, with warm highlights.
Nose: Sweet, floral aromas lead, followed by honeyed malt and a delicate trace of peat smoke. With time in the glass, notes of dried fruit and soft oak emerge.
Palate: Smooth and full of character, with honey, burnt sugar and gentle spices at the forefront. The Oloroso sherry casks bring a layer of dried-fruit sweetness, while the ex-bourbon casks contribute warmth and rounded oak notes. A subtle thread of peat smoke adds complexity without dominating the whisky.
Finish: Long and lingering, with dried fruit, caramel and gentle spice remaining alongside a delicate smoky note.
