Cabernet Sauvignon has long been central to Waterford’s philosophy, with vineyard parcels selected for their ability to produce fruit with natural concentration and freshness. Oak maturation is carefully judged to support the wine’s structure and savoury complexity without dominating the fruit. The 2015 vintage in Stellenbosch was widely regarded as exceptional, producing wines with both ripeness and remarkable definition.

Colour:
Deep ruby with a developing garnet rim, showing maturity while retaining vibrancy.
Nose:
Blackcurrant, cassis, and dark plum are layered with cedarwood, cigar box, graphite, and dried herbs. With time in the glass, notes of cocoa and earthy spice emerge.
Palate:
Structured and composed, with fine-grained tannins and a polished texture. Dark berry fruit remains vibrant, balanced by savoury tobacco leaf, pencil shavings, and subtle oak spice. The acidity keeps the wine focused and energetic despite its depth and maturity.
Finish:
Long, dry, and persistent, with lingering cassis, cedar, and a mineral edge.
