Stellenzicht Wines is situated in Stellenbosch, where the estate's Cabernet Sauvignon vineyards benefit from the region's warm, dry growing season and cooling mountain influences. The name Tristone refers specifically to the three types of sandstone soils on which the Cabernet Sauvignon vines are planted. Each contributes a different element to the finished wine, helping to shape its fruit profile, structure and mineral character. Winemaker L'RĂ© Hughes takes a considered approach in the cellar. The grapes are hand-harvested in the morning, whole berries are fermented for 7–10 days with regular pump-overs, followed by extended skin contact. The wine is then matured for up to 18 months in French oak, with 30% new oak. The result is a Stellenbosch Cabernet Sauvignon that places varietal fruit and site expression alongside polished tannins and carefully integrated oak.

Colour: Deep ruby with a youthful, concentrated core.
Nose: Aromatic and expressive, led by cassis and dark blue fruit, with cedar, subtle herbaceous notes and a gentle pencil-lead character adding complexity.
Palate: Full-bodied and dry, with ripe dark fruit supported by fine, structured tannins. Fresh acidity gives the wine definition, while French oak contributes subtle spice, cedar and savoury depth. There is a pleasing tension between the generous fruit and firm Cabernet structure, giving the wine both richness and focus.
Finish: Long and lingering, with cassis and dark fruit giving way to cedar, pencil lead and fine tannins. The persistent finish reflects the wine's structure and suggests further development in bottle.

  • Food Pairing : The wine's full body, firm tannins and dark-fruit character make it particularly well suited to grilled steak, roast beef, lamb chops, venison or a slow-cooked beef casserole. The tannins work naturally with protein-rich dishes, while the acidity brings freshness to richer sauces and roasted meats. For a meat-free option, try it with a substantial mushroom and lentil dish, where earthy flavours complement the wine's cedar and savoury notes.
