Savage Red 2024
Savage Red is made by Duncan Savage of Savage Wines, working from his urban cellar in Salt River, Cape Town. Rather than relying on a single estate, Savage sources fruit from carefully selected vineyards across the Western Cape, with granite soils and cooler, maritime-influenced sites playing an important role in the style of the wines. For Savage Red 2024, the Syrah comes from two sites: a trellised vineyard in Stellenbosch planted on decomposed granite, and dry-farmed bush vines in the Swartland growing in similarly granitic soils. The combination brings together freshness, perfume and savoury depth with the concentration associated with dry-farmed old vines. Savage's winemaking is deliberately restrained, with whole-bunch fermentation and maturation in seasoned oak rather than new, heavily flavoured barrels. The aim is to preserve the purity of the Syrah and the character of the vineyards.
Colour: Deep ruby red with a youthful purple edge.
Nose: Blackberry, black plum and bramble fruit lead into violet, lavender, white pepper and subtle herbal notes. There is a savoury, mineral quality underneath the fruit, reflecting the granitic origins of the wine.
Palate: Medium-bodied and focused, with ripe blackberry and plum supported by fresh acidity and firm but fine-grained tannins. The palate has a savoury edge, with pepper, herbs and a subtle mineral character adding complexity. Seasoned oak contributes texture without dominating the fruit.
Finish: Long and dry, with dark berries, white pepper, violets and a gently savoury, mineral finish.
- Food Pairing : Savage Red 2024's combination of fresh acidity, fine tannins and savoury Syrah character makes it a natural match for grilled lamb chops, pepper-crusted steak, roast duck, venison or a mushroom and black-pepper ragù. The dark fruit works with richer meats, while the pepper, herbs and mineral freshness add lift and keep the wine from feeling too heavy.
