Savage Never Been Asked to Dance 2025
Savage Never Been Asked to Dance is made by Duncan Savage of Savage Wines from a remarkable old-vine Chenin Blanc vineyard on the border between Paarl and Stellenbosch. Planted in 1956 on granitic soils, this tiny bush-vine site was once destined to be removed before Savage recognised its potential and began working to restore it. Careful vineyard management has since helped bring the old vines back into production, with the site now producing small quantities of concentrated, characterful Chenin Blanc. The wine reflects Savage Wines' restrained approach to winemaking, allowing the vineyard and naturally expressive Chenin Blanc fruit to lead. The grapes are whole-bunch pressed and the wine undergoes natural fermentation before spending around ten months in large, older Stockinger oak barrels. The oak is used for texture and development rather than obvious oak flavour, allowing the granite-derived freshness and old-vine character to remain at the centre.
Colour: Bright pale gold with a youthful, clear appearance.
Nose: A layered nose of yellow apple, ripe citrus and peach, followed by dried honey, chamomile, herbs and subtle savoury, waxy notes. There is a gentle leesy character in the background, adding depth without overpowering the fruit.
Palate: Rich and textured, with ripe apple, peach and citrus flavours balanced by fresh acidity. The granitic origins show through in the wine's mineral, slightly saline character, while time in old oak contributes a creamy texture rather than overt oak flavour. It has enough weight to feel substantial, but the acidity keeps it focused and fresh.
Finish: Long and gently savoury, with citrus, stone fruit, mineral notes and a fine saline quality lingering on the palate.
