Savage Follow The Line 2025
Savage Follow The Line is made by Duncan Savage of Savage Wines from dry-farmed old-vine Cinsault in Darling, where decomposed granite soils and the cooling influence of the Atlantic help retain freshness and perfume in the grapes. The vineyard is around 40 years old, and the combination of old bush vines, low yields and the cool coastal environment gives this Cinsault remarkable concentration without sacrificing elegance. Savage Wines is known for working with distinctive maritime and high-altitude sites across the Western Cape, with a focus on expressing the character of the vineyard rather than masking it with oak or heavy extraction. Follow The Line traditionally undergoes spontaneous fermentation with around 50% whole bunches, followed by gentle extraction and maturation in large, older oak foudres and amphora. The result is a red that shows just how graceful and complex Cinsault can be.
Colour: Bright ruby red with a youthful purple edge.
Nose: Aromatic and lifted, with wild strawberry, raspberry and red cherry leading into rose petals, violets, lavender and subtle white pepper. Hints of fynbos and dried herbs add a savoury layer behind the vibrant fruit.
Palate: Medium-bodied, fresh and finely textured, with juicy red berries and cherry supported by lively acidity and delicate, powdery tannins. The decomposed granite soils bring a distinctive mineral freshness, while the small amount of Syrah adds depth and spice. Despite its perfume and delicacy, there is enough structure and concentration to give the wine real presence.
Finish: Long, dry and savoury, with lingering red fruit, floral notes, white pepper and a subtle mineral-saline character.
- Food Pairing : Savage Follow The Line 2025 is wonderfully versatile with food, particularly dishes where a lighter red works better than a powerful Cabernet or Shiraz. Try it with roast chicken, lamb chops, pork belly, duck, charcuterie or a mushroom and lentil dish. Its bright acidity and fine tannins complement richer meats, while the floral, peppery and savoury character works especially well with herbs, roasted vegetables and gently spiced dishes.
