The Neil Ellis Jonkershoek Cabernet Sauvignon 2019 comes from a single vineyard site in the Jonkershoek Valley, one of Stellenbosch's most distinctive Cabernet Sauvignon-growing areas. Surrounded by dramatic mountain ranges, the valley enjoys a slightly cooler climate and greater rainfall than many other Stellenbosch wards, helping to preserve freshness while allowing Cabernet Sauvignon to achieve full ripeness. Founded by pioneering winemaker Neil Ellis, the estate has long championed the idea that great wines begin with exceptional vineyard sites. The Jonkershoek Cabernet Sauvignon forms part of the winery's vineyard-selection range, showcasing the unique character of a specific place rather than a broader regional blend. Careful vineyard management, whole-berry fermentation and 18 months of maturation in French oak barrels contribute structure and complexity while allowing the vineyard character to remain at the forefront.
Colour: Deep ruby with an intense, youthful core and excellent colour concentration.
Nose: A restrained yet expressive bouquet of blackcurrant, blackberry and blueberry is layered with classic Cabernet notes of cedar, cigar box and subtle graphite. As the wine opens, hints of dried herbs and oak spice emerge.
Palate: The palate is focused and fresh, showing cassis, black cherry and dark berry fruit supported by firm, well-defined tannins. There is impressive concentration without heaviness, with the cool-climate character of the Jonkershoek Valley contributing energy and precision. Oak maturation adds subtle notes of spice and cedar rather than dominating the fruit.
Finish: Long and structured, with lingering dark fruit, cedar and savoury notes carried by fine-grained tannins and vibrant acidity.
- Food Pairing : Neil Ellis Jonkershoek Cabernet Sauvignon 2019 is particularly well suited to robust dishes such as rib-eye steak, venison loin, slow-braised beef short ribs or roast leg of lamb. The wine's firm tannins and concentrated fruit comfortably handle richly flavoured meats, while its freshness prevents heavier dishes from feeling overwhelming. Mature hard cheeses such as aged Cheddar or GruyĂšre also work beautifully, highlighting the wine's cedar, cassis and savoury characteristics. The combination of structure and elegance makes it an excellent choice for winter entertaining or a special braai.
