Founded in 2013, Milk & Honey Distillery is Israel’s first modern whisky distillery and a pioneering force in the country’s emerging whisky industry. Located in Tel Aviv, the distillery was established with the goal of creating high-quality single malt whisky shaped by Israel’s unique Mediterranean climate.
The distillery worked closely with the late Dr Jim Swan, one of the whisky world’s leading maturation experts, whose guidance helped shape the distillery’s early production philosophy. Warm temperatures and coastal humidity accelerate the interaction between spirit and oak, allowing Milk & Honey whiskies to develop complexity relatively quickly compared with cooler whisky regions.
The Milk & Honey Classic Single Malt Whisky is the distillery’s flagship expression. Matured in a combination of ex-bourbon and red wine casks, it reflects the distillery’s house style - approachable, richly textured and layered with both sweetness and spice.
Colour:
Golden amber with warm honey tones.
Nose:
Soft aromas of vanilla, honey and toasted oak lead the way, followed by hints of dried fruit, citrus peel and gentle spice.
Palate:
Rounded and medium-bodied with flavours of caramelised malt, orchard fruit and warm baking spices. Notes of vanilla, light oak and subtle red fruit add depth and balance.
Finish:
Smooth and lingering with gentle sweetness, oak spice and a touch of dried fruit.
