The Joostenberg Song of Soil Rosé 2025 is produced on Joostenberg Estate, situated just outside Paarl where decomposed granite and clay shale soils combine with cooling maritime influences from the nearby Atlantic Ocean. The vineyards, planted on east- and west-facing slopes approximately 27 kilometres from the coast, benefit from conditions that encourage both flavour concentration and natural freshness. Owned by the Myburgh family since 1879, Joostenberg Estate has become one of South Africa's leading organic and regenerative wine farms. Song of Soil is the estate's first dedicated rosé release and reflects its belief that healthy soils produce expressive wines. The vineyards are farmed according to organic and regenerative principles, including seasonal sheep grazing to improve soil vitality and biodiversity. Hand-harvested Mourvèdre and Syrah grapes are whole-bunch pressed, naturally fermented and matured for eight months in stainless steel tanks and concrete egg, creating a rosé with texture, character and a strong sense of place.

Colour: A delicate pale salmon pink with brilliant clarity and subtle copper highlights.
Nose: Fresh aromas of pomegranate, watermelon and ripe red apple lead the bouquet, followed by hints of raspberry, orange peel, Mediterranean herbs and gentle spice.
Palate: Dry and refined, showing impressive texture without sacrificing freshness. Flavours of watermelon, red berries and crunchy apple are supported by bright acidity and a subtle creamy note from extended lees ageing. The Mourvèdre brings savoury depth while the Syrah contributes freshness and aromatic lift.
Finish: Long, clean and mineral, with lingering red fruit, citrus zest and a gentle savoury edge.

Try it with grilled prawns, line fish, chicken skewers, charcuterie or a fresh watermelon and feta salad. Its bright acidity and dry finish complement seafood beautifully, while the wine's subtle texture allows it to stand up to richer dishes such as roast chicken or pork.
