Idle Hands Cabernet Sauvignon 2023
Idle Hands Cabernet Sauvignon 2023 is made from selected vineyards in Stellenbosch, one of South Africa’s most established Cabernet Sauvignon regions. The combination of a Mediterranean climate, warm growing conditions and the cooling influence of the surrounding Stellenbosch mountains provides Cabernet Sauvignon with the concentration and structure it needs, while allowing freshness to remain part of the wine’s character. The wine is matured for 18 months in French oak, with just 10% of the barrels being new. This restrained use of oak allows the dark-fruit character of the Cabernet Sauvignon to remain at the forefront, while adding subtle cedar, spice and polish rather than overwhelming the fruit. The result is a rich but composed Stellenbosch Cabernet with both generosity and structure.
Colour: Deep ruby-red with a dark garnet hue.
Nose: Concentrated aromas of black cherry, ripe blackberry and plum lead the way, followed by subtle cassis and darker berry notes. With time in the glass, hints of cedar, gentle spice and a touch of savoury oak emerge.
Palate: Full-bodied and richly fruited, with layers of black cherry, ripe berries and succulent plum. Fresh acidity keeps the generous fruit from feeling heavy, while firm but polished tannins provide structure. Eighteen months in French oak brings restrained notes of cedar and spice, adding complexity without dominating the Cabernet character.
Finish: Long and smooth, with lingering dark fruit, cedar and gentle spice. The tannins give the finish shape and suggest that the wine will benefit from further time in bottle.
- Food Pairing : The weight, acidity and structured tannins of Idle Hands Cabernet Sauvignon 2023 make it a natural match for richer dishes such as grilled steak, lamb chops, beef burgers with mature cheese, slow-cooked beef short ribs or a hearty mushroom and lentil dish. The dark fruit works well with caramelised and smoky flavours, while the wine’s acidity helps cut through richer meat and sauces and the subtle cedar and spice from the French oak complement grilled and roasted flavours.
