Dornier is based in the Upper Blaauwklippen Valley on the slopes of the Stellenbosch Mountain, an area where decomposed granite soils and cooler afternoon breezes help deliver ripe fruit with natural freshness. Pinotage here tends to show both red and dark berry character rather than heaviness. Dornier’s approach is to handle Pinotage carefully: selective picking, gentle extraction and measured time in oak to keep tannins smooth and the fruit clear. The style aims for a modern, approachable expression of this Cape variety – generous and distinctly South African, but without the rustic edges older styles sometimes had.
Colour:
Deep ruby with a youthful purple rim and good intensity.
Nose:
Bright aromas of ripe cherry and plum lead, backed by mulberry, a hint of raspberry and subtle notes of vanilla, mocha and soft spice from time in oak. A gentle floral and fynbos edge adds interest.
Palate:
Medium bodied with a supple, silky texture. Juicy red and dark berries sit at the core, supported by moderate, rounded tannins and refreshing acidity that keeps the wine lively. Hints of cocoa, sweet spice and a touch of savoury earthiness add complexity without making the wine feel heavy.
Finish:
Medium in length, with lingering red berry, soft chocolate and gentle spice notes.
