Darling Cellars Hannuwa Amphora Sauv. Blanc 2024
Darling Cellars is situated in the Darling wine region of the Western Cape, where cooling Atlantic breezes and distinctive soils help preserve freshness in the grapes. The Hannuwa range takes its name from a San word associated with gathering good fortune through living sustainably and in harmony with nature.
The Darling Cellars Hannuwa Amphora Sauvignon Blanc 2024 explores a different expression of Sauvignon Blanc through fermentation in a ceramic clay amphora rather than conventional stainless steel or oak. The grapes are grown on dry-farmed bush vines rooted in deep red Clovelly soil. Hand-harvested early in the morning, they undergo 24 hours of skin contact at low temperature before the free-run juice is fermented in amphora. The wine then spends a further eight months on its fermentation lees, developing texture and complexity. It is bottled unfiltered and unrefined, allowing the variety, vineyard and amphora method to shape its character.
Colour: Pale straw yellow with a slightly textured, natural appearance.
Nose: Lifted aromas of fresh winter melon and distinctive gunflint notes lead, giving the wine a mineral edge.
Palate: Full-bodied and textured, with flavours of green fig, blueberry and ripe asparagus. The extended lees ageing contributes a rounded mouthfeel, while fresh acidity keeps the wine lively. Its amphora fermentation gives it a different feel from the sharper, more overtly tropical style often associated with Sauvignon Blanc.
Finish: Long and savoury, with lingering green fig, ripe asparagus and a subtle flinty character.
- Food Pairing : Darling Cellars Hannuwa Amphora Sauvignon Blanc 2024 pairs particularly well with fresh oysters, grilled line fish, goat's cheese salad or a savoury vegetarian tart. Its freshness complements seafood, while the wine's fuller texture and savoury, mineral character work well with creamy goat's cheese and roasted vegetables. For a simple lunch, try it with asparagus and feta tart or pan-fried fish with herbs and lemon, allowing the wine's distinctive texture and flinty notes to complement the food.
