Chamonix Cap Classique 2022
Cap Classique
Description
Chamonix Wine Farm sits high on the eastern slopes of the Franschhoek Valley, where elevated vineyards, cool mountain air and decomposed granite soils create ideal conditions for producing wines with freshness and precision. The estate has built a reputation for elegant Chardonnay and Pinot Noir, with a strong focus on site expression and careful vineyard management.
The Chamonix Cap Classique 2022 is crafted entirely from Chardonnay using the traditional bottle-fermented method. Fruit is harvested early to preserve natural acidity before undergoing gentle pressing and cool fermentation. Extended lees ageing in bottle adds texture and complexity while maintaining the wine’s bright citrus character. The result is a refined Cap Classique that leans towards purity and finesse rather than overt richness.
Colour:
Pale gold with a delicate, persistent mousse.
Nose:
Fresh lemon zest, green apple and white pear aromas are layered with subtle brioche, toasted almond and hints of wet stone.
Palate:
The Chamonix Cap Classique 2022 is crisp and finely textured, with lively acidity carrying flavours of citrus, apple and stone fruit. Time on the lees brings gentle creaminess and biscuit complexity, while the cool-climate Chardonnay profile keeps the palate focused and energetic.
Finish:
Clean and refreshing, with lingering citrus peel, chalky minerality and soft pastry notes.

- Food Pairing : The bright acidity and fine mousse of Chamonix Cap Classique 2022 make it particularly versatile with food. It pairs beautifully with fresh oysters, tempura prawns or smoked trout, where the citrus freshness lifts delicate seafood flavours. Creamy goat’s cheese, sushi or roast chicken with lemon and herbs also work well, while the subtle brioche character complements mushroom risotto and parmesan-based dishes without overpowering them.
