This 2021 Pinotage is sourced from the Breedekloof Valley, where mountain ranges and cooling influences from altitude create a slower ripening environment. This allows for fuller flavour development while retaining natural acidity. In the cellar, the approach is deliberate but not heavy-handed - gentle extraction, a period of skin contact, and partial oak maturation (around 20%) provide structure and polish without overwhelming the fruit.
