Stellenzicht Tristone Cabernet Sauvignon 2023

Stellenzicht Wines is situated on the slopes of the Helderberg Mountain in Stellenbosch, where elevation, maritime influences and varied vineyard soils contribute to the character of its wines. The estate follows a sustainability-focused approach to vineyard management, aiming to protect the surrounding ecosystem while producing wines that express their origins. The Stellenzicht Tristone Cabernet Sauvignon 2023 takes its name from the three distinct soil types found across its Cabernet Sauvignon vineyards: rocky sandstone at higher elevations, decomposed sandstone on the mid-slopes and koffieklip lower down. Each contributes a different dimension to the wine, helping shape its aromatic character, structure and texture. The grapes are hand-harvested in the morning, fermented as whole berries and left on their skins after fermentation to build colour and tannin. The wine then matures for up to 18 months in French oak barrels, including 30% new oak, adding complexity while preserving the clarity of the Cabernet Sauvignon fruit.

Colour: Deep ruby red with a dark, concentrated appearance.
Nose: Aromatic blackcurrant and cassis lead, accompanied by blue-fruit notes and cedar. Subtle savoury hints of pencil lead add complexity and reflect the classic Cabernet Sauvignon character. 
Palate: Full-bodied and structured, with concentrated dark berries and cassis supported by fine, firm tannins. Fresh acidity gives definition, while integrated French oak contributes cedar and subtle spice. The texture is polished rather than coarse, with the fruit and tannins working together to create depth and persistence. 
Finish: Long and lingering, with dark fruit, cedar and a distinctive pencil-lead note carried by refined tannins.
