What is batonnage?
Bâtonnage, is the term used to describe the technique of stirring settled lees back into wine.

Don't know what lees is either? Lees is what is known as the sediment of winemaking, which is mostly made up of dead yeast cells, grape seeds and solids. Now why would you want to stir all of this up again?



Flavour. The lees adds a complexity of flavour, aroma and texture to a wine. Once it's done its job, it can then be filtered or fined out before bottling. The wine can also be racked, which would leave the solids behind.
