Nestled on the biodynamically farmed slopes of Waterkloof Estate, south of Somerset West overlooking False Bay, Astraeus represents the winery’s approach to thoughtful, terroir-driven sparkling wine. Waterkloof champions regenerative viticulture within the Cape Floral Region, encouraging natural balance in the vineyard and minimal intervention in the cellar. Grapes for Astraeus are hand-harvested at lower sugar levels from cool Elgin vineyards, gently pressed and fermented spontaneously in older barrels before extended bottle ageing in true Méthode Cap Classique fashion. This blend of place, patience and precision yields a sparkling wine with both freshness and textural richness.

Nose: Inviting aromas of fresh green apple, biscuit and light stone fruit framed by subtle leesy warmth and gentle toast.
Palate: Crisp acidity underpins a lively mousse and flavours of green apple, lemon zest and brioche-like nuance. The texture shows depth from lees ageing without overwhelming freshness.
Finish: Clean, persistent and dry, with an elegant retronasal of citrus and biscuit that lingers.
