Neethlingshof Caracal Bordeaux Blend 2021 (Diners)
Bordeaux Blend
Description
Neethlingshof Estate sits along the Polkadraai Hills outside Stellenbosch, where vineyards benefit from cooling sea breezes drifting inland from False Bay. These maritime influences slow ripening and help maintain freshness in Bordeaux varieties, allowing the grapes to develop depth and balance in the warm Stellenbosch climate.
Founded in 1692, Neethlingshof is one of the Cape’s historic wine estates. Today the farm combines traditional winemaking with a strong focus on biodiversity and conservation. The Caracal forms part of the estate’s “Short Story Collection”, wines that celebrate the wildlife returning to the farm’s natural areas - in this case the elusive caracal that now inhabits the surrounding hills.
Fruit for the blend is sourced from selected vineyard blocks and harvested by hand. The different components are fermented separately and matured in French oak barrels for around fourteen months before the final blend is assembled, allowing each variety to contribute its own structure, aroma and texture.
Colour:
Deep ruby with dark, intense colour and youthful brightness in the glass.
Nose:
Aromatic layers of black cherry, plum and blackcurrant lead the bouquet, supported by hints of cedar, graphite and subtle white pepper with touches of leather and cigar box.
Palate:
Full-bodied yet refined, showing flavours of blackberry, plum and dark cherry framed by firm but polished tannins. The Cabernet-driven core brings structure, while Merlot and Malbec contribute roundness and richness.
Finish:
Long and structured with lingering dark fruit, savoury spice and a gentle oak influence.

Neethlingshof Caracal Bordeaux Blend 2021 (Diners)
- Food Pairing : Neethlingshof Caracal Bordeaux Blend 2021 works particularly well with dishes that match its structure and depth. Grilled lamb chops or slow-cooked beef brisket complement the wine’s firm tannins and dark fruit profile, while pepper-crusted steak echoes the wine’s subtle spice and cedar notes. Rich vegetable dishes such as roasted aubergine, mushroom risotto or ratatouille also pair well, as their earthy flavours align with the wine’s savoury character and balanced acidity.
