Glendalough was founded in 2011, making it one of Ireland's first craft distilleries. The Glendalough Calvados XO Single Cask Whiskey is a single grain Irish whiskey finished in XO Calvados casks. Part of the Glendalough distillery's Single Cask series, it is a limited edition bottling that offers a combination of Irish whiskey tradition and the fruity complexity of French apple brandy. Notes of vanilla, toffee, stewed apple, and pear on the palate, with a floral and orchard fruit aroma and a spicy, fruity finish. The whiskey is aged first in bourbon casks before being finished in French oak casks that once held Calvados XO apple brandy, which contributes the rich fruity and spiced notes.
Colour: Warm golden straw with soft amber glints earned from the Calvados-seasoned oak.
Nose: Floral and inviting, with orchard fruit aromas - crisp apples and pear - supported by vanilla, gentle honeyed sweetness and subtle oak spices.
Palate: Smooth and approachable, with butterscotch and toffee notes giving richness, while stewed apple, baked pear and gentle cinnamon spice evoke the influence of the Calvados casks. A hint of pepper and woody spice deepens the flavour without overpowering.
Finish: Moderately long and gentle, redolent of orchard fruits lingering with subtle oak spice and a dry, warming touch
