Dailuaine is a long-established Speyside distillery with roots back to 1852, perched near the banks of the River Spey and historically respected both for its contribution to fine blends and for the quality of its single malt. The distillery’s spirit is typically rich, full-bodied and malty - characteristics prized in many classic Speyside whiskies.
This expression - distilled in 2015 and bottled in 2023 by respected independent bottler Adelphi - is drawn from a single oak cask (cask number 312012) and released at natural cask strength. With only 290 bottles produced, it represents a rare snapshot of one cask’s unique maturation over eight years.
Adelphi’s Selection single cask releases focus on flavour purity and cask character rather than large-scale consistency, making each bottle a distinctive dram that reflects both distillery spirit and oak influence in bold fashion.
Colour:
Rich amber - a hint of deep warmth from cask influence.
Nose:
Pronounced aromas of caramel and toffee apple with vanilla and warm baking spice. There’s a sherry-inspired sweetness allied to citrus zest and a touch of oak spice that draws you in.
Palate:
Full-flavoured and broad, with luscious caramel and butterscotch tones supported by ripe fruit and gingerbread spice. The high ABV gives weight and intensity without harshness, framed by subtle oak warmth and balanced sweetness.
Finish:
Long and warming, with lingering spice, gentle pepper and a hint of dried fruit richness that invites thoughtful sipping.

- Food Pairing : Serve neat or with a few drops of water to open aromas and soften high strength. At 59.4% cask strength, it rewards slow sipping, ideally in a tulip whisky glass at around 18–20 °C. It pairs beautifully with dark chocolate, almond and dried fruit desserts, or with a cheese board featuring mature cheddar and nutty Comté - the whisky’s rich malt and spice will echo nutty sweetness while its warmth cuts through creaminess. Its robust profile also stands up to smoked meats or slow-roasted pork, where caramel and spice notes mirror the whisky’s depth.
