Waterford Estate sits in the Blaauwklippen Valley of Stellenbosch, a region rooted in maritime-influenced terroir and limestone-rich soils that lend both precision and minerality to its wines. Drawing on old-world inspiration with meticulous vineyard work and patient cellar craft, Waterford produces its vintage Méthode Cap Classique Blanc de Blancs with extended lees ageing - in this case, six years on the yeast in bottle - for structure, depth and complex aromatic layers. The estate’s philosophy balances respect for place with traditional technique, revealing both chalky finesse and creamy development in its premium sparklers.
Colour: Bright pale gold with a stream of very fine, persistent bubbles rising gracefully in the glass, signaling careful bottle maturation.
Nose: Aromas open with classic Cap Classique signatures - rich brioche and freshly baked bread, leading into stone fruit (yellow orchard fruit, ripe peach) and subtle citrus peel, all underpinned by a hint of mineral chalk and orange blossom.
Palate: Crisp acidity carries delicate yet layered flavours of pear and golden apple, with lees-induced notes of almond and a whisper of toast delivering texture. The mousse is fine and creamy, integrating fruit and autolytic complexity.
