Iona Elgin Highlands Sauvignon Blanc 2025 is produced by Iona Vineyards, founded by Andrew Gunn in the elevated Elgin Highlands of the Western Cape. Situated approximately 420 metres above sea level, overlooking the Atlantic Ocean and surrounded by the Kogelberg Nature Reserve, the estate benefits from some of the Cape's coolest vineyard conditions. The long, cool growing season allows the grapes to ripen slowly, helping preserve natural acidity while developing layers of citrus, orchard fruit and distinctive herbal aromas. The vineyards are farmed according to organic and biodynamic principles, with a strong emphasis on soil health and minimal intervention. The 2025 wine combines 96% Sauvignon Blanc with 4% Sémillon. Most of the Sauvignon Blanc is fermented in stainless steel to retain aromatic precision, while a small portion of the blend receives natural fermentation in large French oak barrels. Five months on the lees adds texture and complexity without obscuring the wine's fresh, cool-climate character. The result is an elegant Elgin Sauvignon Blanc with both vibrancy and depth.

Colour: Pale straw yellow with a bright, youthful appearance and subtle green highlights.
Nose: Fresh lime and ripe gooseberry lead, followed by ruby grapefruit, white pear and delicate tropical fruit. Floral notes and fresh herbs add aromatic complexity, with a subtle flinty character contributing a savoury edge.
Palate: Dry and finely textured, with lively citrus acidity supporting flavours of lime, grapefruit, gooseberry and passion fruit. A delicate mineral character gives the wine precision, while the small Sémillon component and time on the lees add gentle roundness. The result is a Sauvignon Blanc that combines freshness with a more layered, elegant palate.
Finish: Long and refreshing, with lingering citrus, ripe gooseberry and a subtle saline, mineral note. The finish is clean and precise, with enough texture to keep it interesting beyond the initial burst of freshness.

  • Food Pairing : Iona Elgin Highlands Sauvignon Blanc 2025 pairs beautifully with grilled linefish, fresh oysters, lemon-and-herb prawns, asparagus risotto and a goat's cheese salad. Its lively acidity cuts through richer textures, while the citrus and herbal notes complement seafood, fresh greens and dishes seasoned with lemon, dill or coriander. For a South African summer lunch, serve it with simply grilled hake, roasted asparagus and a squeeze of lemon. It is equally enjoyable on its own when you want a crisp, aromatic white with a little more texture and complexity than a straightforward Sauvignon Blanc.
