Eagles’ Nest is planted on steep, high-elevation terraces in the Constantia Valley where cool ocean breezes and sandstone-derived soils give white varieties real lift and minerality. The farm emphasises careful vineyard work — many blocks are hand‑harvested on the steep slopes — and the site’s cool mesoclimate is central to the wine’s freshness and aromatic focus. The estate’s cellar approach for the Sauvignon Blanc aims to preserve varietal clarity while using measured lees contact and a touch of barrel nuance where it adds texture rather than overt oak.
Colour:
Pale lemon with a faint green tinge and clear brightness.
Nose:
Lifted tropical and citrus notes: ripe stone fruit, mandarin/white pear and lime, with classic green threads of gooseberry and cut grass. There’s also a floral lift (jasmine/elderflower) and a discreet mineral or wet‑stone note.
Palate:
Medium-bodied for a Sauvignon Blanc, with a juicy citrus core and ripe pear/stone‑fruit mid-palate. A short period on lees gives a slightly rounded, textural mouthfeel that tempers the acidity; the wine remains dry and crisp, with underlying savoury/mineral tension rather than overt tropical sweetness. Vinification notes for this bottling include careful whole-bunch/partial whole‑bunch pressing and short lees ageing before bottling.
Finish:
Clean and refreshing, finishing on citrus zest, light tropical fruit and a saline/mineral whisper that keeps the finish focused and moreish.
