Eagles Nest sits high on the steep, south-facing slopes of Constantia, one of South Africa’s coolest winegrowing areas. The vineyards look towards the Atlantic, with maritime breezes and a long, slow ripening season that naturally favour Sauvignon Blanc with bright acidity and finely etched aromatics. Granite-derived soils add tension and a subtle mineral line to the wines. The Reserve Sauvignon Blanc is a selection from the best parcels and tanks, with fruit picked for both ripeness and precision. Winemaking is clean and restrained: cool fermentation in stainless steel, time on fine lees for texture, and a focus on expressing Constantia’s cool-climate character rather than overt tropical richness. It’s a style that marries New World clarity of fruit with a calm, almost European sense of restraint.
Colour:
Pale straw with a distinct green tint, bright and luminous in the glass, signalling youth and cool-climate freshness.
Nose:
Lime, lemon and grapefruit sit at the core, supported by green apple and gooseberry. Subtle layers of fresh-cut herbs, nettle and capsicum add a classical cool-climate edge, while hints of passion fruit and cape gooseberry bring a gentle tropical note. A faint wet-stone, saline character underpins the fruit.
Palate:
Light to medium-bodied with crisp, linear acidity that feels taut and mouth-watering. The palate follows with citrus, green apple and gooseberry, joined by kiwi and restrained tropical nuances. Lees ageing typically adds a slight creaminess through the mid-palate, so the wine feels textured rather than razor-sharp, while staying firmly dry. Overall, it is focused, refreshing and clearly geared for the table.
Finish:
Medium to long, with lingering lime, grapefruit pith, fresh herbs and a clean, salty-mineral snap.
