David Finlayson has become one of Stellenbosch’s most respected Chardonnay producers, combining international winemaking experience with a clear understanding of local terroir. Produced from multiple vineyard sites across Stellenbosch, the David Finlayson Chardonnay 2025 reflects a balance between richness, freshness and mineral structure.
The vineyards are planted on decomposed shale and clay-rich soils on the slopes surrounding the Simonsberg, where cooler conditions and elevation help preserve acidity and aromatic detail. The wine is barrel fermented and matured predominantly in French oak, with only a small percentage of new oak used to support rather than dominate the fruit. A portion undergoes malolactic fermentation to add texture and complexity while maintaining the wine’s focused, mineral style.
Colour:
Bright pale gold with a youthful green tint.
Nose:
Lime citrus, lemon zest and white peach aromas lead the nose, followed by notes of sourdough, toasted almond, cinnamon and delicate white flowers.
Palate:
Elegant and textured, with fresh citrus and stone fruit flavours supported by bright acidity and a fine mineral edge. The oak influence is subtle, adding gentle creaminess and hints of spice rather than overt richness. The palate remains linear and focused, showing freshness alongside layered complexity.
Finish:
Long and refined, with lingering citrus, mineral notes and soft toasted spice on the finish.

Grilled line fish, creamy chicken dishes and seafood risotto work beautifully with the wine’s citrus acidity and textured palate, while roast pork belly or paella complement its subtle oak spice and savoury complexity. The mineral character also makes it an excellent match for mushroom-based dishes or mildly spiced Cape Malay cuisine, where freshness and texture are equally important.
