Tokara Reserve Cabernet Sauvignon 2022
Located on the slopes of the Simonsberg Mountain outside Stellenbosch, Tokara farms in an area shaped by mountain elevation, warm Mediterranean summers and cooling coastal influences. These conditions help Cabernet Sauvignon develop concentrated fruit while retaining the freshness and structure needed for a more layered red wine. The Reserve Collection is made from grapes selected from the best parts of Tokara's Reserve vineyard blocks. The Tokara Reserve Collection Cabernet Sauvignon 2022 reflects a considered approach to winemaking. Grapes are hand-picked, sorted and fermented spontaneously in stainless-steel and wooden upright fermenters. After fermentation, the wine undergoes malolactic fermentation and matures for 22 months in French oak, including a significant proportion of new barrels. The result is a structured, full-bodied Stellenbosch red that combines dark fruit with savoury complexity and polished tannins.
Colour: Brilliant purple-black at the core, with a deep ruby edge.
Nose: Cassis, black cherry and briary dark fruit lead the aromas, followed by graphite, dried lavender, subtle fynbos and a touch of five-spice.
Palate: Full-bodied and concentrated, with ripe dark fruit supported by dense, fine-grained tannins. Freshness gives the wine lift, while the French oak contributes subtle spice and depth. The palate is structured but not heavy, with layers of fruit and savoury complexity.
Finish: Long and persistent, with cassis, dark cherry, graphite and fine tannins lingering on the palate.
- Food Pairing : Tokara Reserve Collection Cabernet Sauvignon 2022 is well suited to slow-braised beef cheek, beef short rib, roast lamb shoulder, grilled steak or a rich mushroom and aubergine dish. Its full body and firm tannins work particularly well with slow-cooked and grilled meats, while the wine's freshness helps balance richer sauces and savoury flavours. The dark fruit and subtle oak spice also complement the smoky, caramelised flavours of a South African braai.
