Tokara Reserve Elgin Sauvignon Blanc 2025
Located on the elevated slopes of Elgin, Tokara extends its winemaking into one of South Africa's coolest wine-growing regions. The Reserve Elgin Sauvignon Blanc comes from Tokara's Highlands farm, where elevation, cool maritime influences and predominantly Table Mountain sandstone soils create conditions well suited to Sauvignon Blanc with aromatic intensity and natural freshness. The Reserve Collection is made from selected blocks chosen for their flavour and aromatic qualities. Grapes are hand-picked at dawn, cooled before transport and gently pressed. Only the free-run juice from the best blocks is used, followed by fermentation in stainless steel and nine months of lees maturation with regular stirring. This approach builds texture and depth while preserving the crisp, expressive character of Elgin Sauvignon Blanc.
Colour: Pale straw with brilliant green highlights.
Nose: Lime blossom and passion fruit lead the aromas, followed by lemongrass, blackcurrant leaf and sweet greengage.
Palate: Bright and refreshing, with concentrated citrus and tropical fruit flavours supported by lively acidity. Lees maturation adds a little texture and depth, while a subtle mineral character keeps the wine focused and fresh.
Finish: Long and clean, with citrus, green fruit and a gently saline, mineral impression.
- Food Pairing : Tokara Reserve Elgin Sauvignon Blanc 2025 is a natural match for fresh oysters, grilled yellowtail with salsa verde, lemon-and-herb prawns, a goat's cheese salad or grilled chicken with a fresh herb dressing. Its lively acidity and mineral freshness work particularly well with seafood, while the citrus and green-fruit character complements fresh herbs and lighter dishes. The wine's texture also makes it suitable for creamy seafood preparations without overwhelming their delicate flavours.
