Tokara's Reserve Elgin Sauvignon Blanc is grown on the estate's cool-climate Highlands farm in Elgin, perched about 415 m above sea level and influenced by breezes from the Atlantic, which slow ripening and build aromatic intensity. The Reserve Collection focuses on grapes from the most expressive blocks, hand-harvested at first light to capture purity and fragrance. Fruit is gently whole-bunch pressed and fermented in stainless steel before extended lees ageing to add texture without detracting from varietal freshness. The result is a wine that champions Elgin's crystalline acidity and lifted aromatics, combining precision with approachable complexity. Colour: Pale straw with a brilliant green edge, a sign of youthful freshness. Nose: Inviting aromas of lime blossom and passion fruit open first, evolving into lemongrass, blackcurrant leaf and sweet greengage, with an underlying whisper of coastal salinity. Palate: Bright, focused and poised, the palate offers crisp citrus and tropical flavours with a lively acidity that lifts the fruit and lends energy. Texture from lees ageing gives gentle breadth without diluting the varietal clarity. Finish: The finish is fresh and lingering, marked by citrus zest and subtle mineral tension, making it both refreshing and memorable.
