Blaauwklippen Cabernet Sauvignon 2022
Founded in 1682, Blaauwklippen is one of Stellenbosch's historic wine estates, situated among the granite boulders and mountain slopes of the Stellenbosch wine region. Its vineyards benefit from mineral-rich Tukulu soils, with the Cabernet Sauvignon for this wine coming from two vineyard sites selected for their ability to produce concentrated fruit and good natural structure. The Blaauwklippen Cabernet Sauvignon 2022 is technically a Cabernet-led blend, combining 85% Cabernet Sauvignon with 10% Merlot and 5% Petit Verdot. The grapes were handpicked before whole-berry fermentation in French oak casks and stainless-steel tanks. After around 14 days of extended skin contact, the wine underwent malolactic fermentation in 300-litre French oak barrels and matured for 17 months, with 30% new oak. The result is a structured yet polished Stellenbosch red, where ripe fruit sits comfortably alongside spice, cedar and chocolate complexity.
Colour: Deep ruby red with rich garnet tones and impressive depth of colour.
Nose: Intense mulberry, blueberry and cassis lead the aromatics, followed by dark chocolate, fruitcake and cedarwood. Subtle Christmas spice adds warmth and complexity, while the oak remains integrated rather than dominant.
Palate: Full-bodied and textured, with concentrated dark berry fruit supported by firm but polished tannins. Mulberry, blueberry and cassis are joined by darker chocolate and gentle spice through the mid-palate. The 17 months of barrel maturation contribute a creamy texture and savoury cedar character, while the wine retains enough freshness to keep the richness focused.
Finish: Long, plush and vibrant, with dark berry fruit, cedar and chocolate lingering alongside refined tannins and a savoury edge.

Try it with rack of lamb, a beautifully grilled steak, beef bourguignon or venison, all of which complement the wine's dark fruit and structured palate. The cedar, chocolate and spice notes also work particularly well with slow-cooked and roasted meats, while the wine's freshness helps keep richer dishes from feeling too heavy. These pairings are also recommended by Blaauwklippen itself.
