Centinela Anejo Tequila
Centinela Añejo Tequila is produced in the highlands of Jalisco, in and around the town of Arandas - a region known for its red clay soils and elevated altitude, which yield agave with naturally higher sugar content and a softer, more floral profile. The Centinela distillery has roots dating back to the early 20th century, maintaining a traditional approach that balances efficiency with respect for heritage. Mature Blue Weber agave is slow-cooked, fermented, and double-distilled before ageing in oak barrels for at least one year. This maturation step is key, bringing a layer of warmth and complexity that moves the spirit beyond its raw, vegetal origins into something more rounded and contemplative.
Colour:
Warm amber with golden highlights, showing clear oak influence from ageing.
Nose:
Cooked agave leads, followed by vanilla, caramel, and light toffee notes. Subtle hints of dried fruit, oak spice, and a touch of toasted coconut add depth.
Palate:
Smooth and medium-bodied, with a gentle sweetness from the agave balanced by oak-derived flavours of vanilla, spice, and soft caramel. The texture is rounded rather than sharp, with a mild peppery lift that keeps it lively.
Finish:
Lingering and warming, with notes of oak, sweet spice, and a faint echo of agave. Clean, with no harsh edges.

Try it alongside slow-cooked pork tacos or braised beef, where the richness of the meat is lifted by the tequila’s gentle spice and oak. Grilled chicken with a citrus marinade works equally well, as the brightness cuts through the spirit’s rounder texture. For something local, it complements sticky braai ribs or even mildly spiced boerewors, where the caramelised edges and smoky notes mirror the tequila’s ageing influence. A square of dark chocolate or a caramel-based dessert also makes a natural pairing, drawing out its softer, sweeter side.
