MCC stands for Méthode Cap Classique, the traditional term widely used for South African bottle-fermented sparkling wine. The category is now generally referred to as Cap Classique. Many South African shoppers still search for and use the term MCC, so you may encounter both names.

These terms indicate the general level of sweetness. Extra Brut is very dry, Brut is dry and widely popular, while Demi-Sec is noticeably sweeter. Understanding these terms can make it easier to choose a sparkling wine that matches your taste.

A standard 750 ml bottle generally provides around six glasses, depending on the pour size. This is useful when planning a toast or celebration. If sparkling wine will be served throughout an event rather than only for a toast, allow for additional bottles.

Chill the bottle properly, remove the foil and loosen the wire cage while keeping a thumb over the cork. Hold the bottle at an angle away from people and breakable objects, then slowly twist the bottle rather than the cork until it releases gently.

It can retain some of its fizz if sealed immediately with a proper sparkling wine stopper and refrigerated. A standard wine cork is usually not suitable. The sooner the bottle is resealed and chilled, the better the chance of preserving its bubbles for the next day.
