Billecart Salmon Brut Rose NV
Founded in 1818 in Mareuil-sur-Aÿ, the family-owned Billecart-Salmon house has built a reputation for producing Champagnes defined by finesse, precision and restraint rather than overt richness. The Brut Rosé NV has become one of the estate’s signature wines and remains a benchmark for elegant rosé Champagne.
Fruit is sourced from top villages across the Champagne region, combining Chardonnay for lift and freshness, Pinot Noir for structure and red fruit character, and Pinot Meunier for softness and approachability. Slow, cool fermentation in stainless steel and extended lees ageing help preserve purity and texture, while the house style consistently leans toward refinement and clarity over weight. The result is a rosé Champagne that feels polished and composed, yet still approachable and versatile at the table.
Colour:
Delicate pale salmon pink with a fine, persistent mousse and bright copper reflections.
Nose:
Fresh strawberry, raspberry and red currant aromas lead the bouquet, followed by citrus peel, white flowers and subtle brioche notes. Gentle hints of crushed biscuit and chalk add depth without overpowering the fruit.
Palate:
Creamy yet precise, with fine bubbles carrying flavours of wild strawberry, blood orange and red berries across the palate. The texture is silky, supported by bright acidity and a mineral edge that keeps the wine focused and dry rather than sweet.
Finish:
Long, clean and refreshing, with lingering raspberry, citrus zest and a faint savoury chalkiness.
- Food Pairing : Billecart-Salmon Brut Rosé NV is exceptionally versatile with food thanks to its freshness, fine mousse and delicate red fruit character. It works beautifully with salmon gravadlax, tuna tartare or fresh sushi, where the wine’s acidity cuts through richness while complementing delicate seafood flavours. Roast duck with cherry glaze is another natural pairing, echoing the wine’s red berry profile without overwhelming its elegance. For lighter occasions, it pairs comfortably with strawberry desserts, berry pavlova or even a creamy white pizza, where the freshness and subtle savoury notes keep the combination lively and balanced.
