Founded in 1818 in Mareuil-sur-Aÿ, Billecart-Salmon is one of Champagne’s most respected family-owned houses, known for its restrained, elegant style and meticulous attention to detail. The house philosophy centres on precision, freshness and slow cellar ageing, producing wines that favour finesse and texture over sheer power.
The Billecart-Salmon Demi-Sec NV offers a richer interpretation of the house style, with additional dosage bringing softness and roundness while retaining the freshness that defines the estate. Produced from the traditional Champagne blend of Chardonnay, Pinot Noir and Pinot Meunier, the wine spends extended time ageing on lees before release, contributing fine mousse texture and layered complexity. Despite its sweeter profile, the wine remains balanced and composed rather than overtly sugary.
Colour:
Bright pale gold with a fine, persistent mousse.
Nose:
Aromas of ripe pear, baked apple and white peach open the nose, followed by notes of honey, brioche and candied citrus peel. Floral hints and subtle almond pastry complexity develop with time in the glass.
Palate:
Soft and rounded on entry, with flavours of orchard fruit, acacia honey and citrus marmalade balanced by lively acidity and fine bubbles. The sweetness is noticeable but controlled, giving richness without heaviness. Creamy lees texture and delicate pastry notes add depth through the mid-palate.
Finish:
Smooth and lingering, with notes of honeyed citrus, baked apple and brioche carrying through the finish.
