Darling Cellars is based on the cool West Coast, just inland from the Atlantic Ocean, where ocean breezes play a defining role in shaping the wines. The Darling Hills benefit from a mix of maritime influence and dryland bush vine vineyards, allowing grapes to ripen slowly while retaining natural acidity - a key factor for quality Cap Classique.
The OBV (Old Bush Vine) Cap Classique range reflects a focus on site expression and patience in the cellar. Made in the traditional method, the wine undergoes secondary fermentation in bottle and extended lees ageing, building the fine mousse and subtle brioche character expected of this style. The approach is classic but approachable - structured enough for interest but crafted with drinkability in mind.

Pale gold with a fine, persistent stream of bubbles.
Nose:
Green apple, lemon zest and pear lead, followed by hints of brioche, biscuit and light almond.
Palate:
Crisp and refreshing on entry, with citrus and orchard fruit supported by a creamy mousse. The lees ageing adds a soft, rounded texture, while the acidity keeps the wine focused and lively.
Finish:
Clean and dry, with lingering citrus and a subtle toasted note.
