Founded by Neil Ellis in 1986, Neil Ellis Wines has long championed the idea that great wines begin in the vineyard. Rather than focusing on a single estate, the winery sources fruit from carefully selected sites where each variety performs at its best. Cabernet Sauvignon has always been central to the Neil Ellis story, with Stellenbosch providing the ideal combination of climate, elevation and soils for producing structured, age-worthy wines. For the Stellenbosch Cabernet Sauvignon 2020, fruit was sourced from selected vineyards across the region and matured in French oak barrels for 18 months. The result is a wine that captures the hallmark character of Stellenbosch Cabernet: concentrated fruit, fine tannins and classic varietal expression without excessive oak influence.
Colour: Deep garnet red with a bright ruby edge, showing excellent concentration and clarity.
Nose: Aromatic notes of blackcurrant, blackberry and dark plum are layered with cedar, pencil shavings, dried herbs and subtle spice. Gentle oak integration adds hints of tobacco leaf and dark chocolate.
Palate: Full-bodied and composed, with flavours of cassis, black cherry and ripe plum supported by fine-grained tannins. The fruit is balanced by savoury notes, subtle cedar spice and fresh acidity, creating a wine that is structured without feeling heavy.
Finish: Long and polished, with lingering dark fruit, gentle oak spice and a touch of graphite and cassis on the finish.
