Darling Cellars Reserve Black Granite Shiraz 2023
Darling Cellars sits on the Darling wine route, a cool-climate area north of Cape Town known for its unique granite and black clay soils. These soils, paired with ocean-cooled breezes and a long, moderate ripening season, encourage Shiraz to develop ripe fruit character while retaining freshness and spice complexity. The Reserve Black Granite range is crafted to express this site influence with clarity, using careful oak maturation and gentle cellar handling to support depth without dulling varietal brightness. The result is a Shiraz with appealing fruit intensity, balanced oak and a sense of place that feels both composed and generous.
Colour: Deep ruby with violet highlights, clear and inviting in the glass.
Nose: Aromas of ripe blackberry and plum are layered with pepper spice, dried herbs and subtle hints of smoked cedar. There is an approachable warmth without heaviness, with savoury notes weaving through the fruit.
Palate: Medium-to-full bodied with concentrated dark fruit at the core. Flavours of black cherry, bramble and spice are framed by soft, fine tannins and balanced acidity. Oak influence brings gentle vanilla and toast without overwhelming the fruit profile.
Finish: Lingering and savoury, with spice and dark fruit echoing through to a smooth, dry close.
- Food Pairing : Darling Cellars Reserve Black Granite Shiraz 2023 pairs well with hearty, flavourful dishes that complement its dark fruit and spice. Grilled lamb chops with rosemary and garlic echo the wine’s savoury depth, while slow-braised beef or oxtail stews bring out its richer fruit tones and supple tannins. Smoky barbecue ribs or a mushroom and black bean casserole also work well, letting the wine’s pepper spice and dark berry character stand alongside bold flavours without overpowering them. Regular black pepper, roasted vegetables and charred edges on grilled food will harmonise with the Shiraz’s spice and savoury nuances.
