Peacock Wild Ferment Merlot 2024 is produced by Waterkloof Wines through its False Bay Vineyards range, a project focused on naturally made, site-driven wines at everyday prices. Waterkloof, based on the Schapenberg slopes above False Bay in Stellenbosch, is widely respected for regenerative farming, low-intervention winemaking and wines that express freshness and place.
Fruit for this Merlot comes from the Helderberg and Schapenberg vineyards, among the coolest and most maritime-influenced parts of Stellenbosch. Strong ocean breezes help moderate temperatures, allowing slower ripening and more elegant tannin development. Fermentation takes place with wild yeasts in open-top wooden fermenters, followed by ageing in older barrels, preserving fruit purity while adding texture and subtle complexity.

Deep ruby red with youthful purple highlights.
Nose:
Ripe aromas of cassis, red cherry and plum lead, followed by hints of cedar, earth and gentle spice.
Palate:
Fresh and supple, with flavours of red berries, black plum and a touch of liquorice. The texture is smooth and rounded, supported by fine tannins and balanced acidity. Elegant rather than heavy, with good fruit clarity throughout.
Finish:
Clean and persistent, with lingering berry fruit and a softly savoury note.
