Peter Falke Cabernet Sauvignon 2022
Cabernet Sauvignon
Description
Peter Falke Wines is situated on Groenvlei Farm on the slopes of the Helderberg Mountains in Stellenbosch, an area often referred to as part of the region’s “Golden Triangle” for red wine production. The vineyards benefit from well-drained soils and cooling breezes from False Bay, which help moderate the warm climate and allow Cabernet Sauvignon to ripen slowly while retaining freshness.
The estate is known for its small-scale, quality-focused approach. Fruit is carefully selected in the vineyard, with only the best bunches harvested to ensure concentration and balance. Once in the cellar, grapes undergo another selection before fermentation begins. A short period of cold soaking helps extract colour and aroma before fermentation proceeds with gentle extraction to maintain texture and structure.
After fermentation, the wine matures in first- and second-fill French oak barrels for around 18 months, allowing the tannins to soften and complexity to develop while preserving the purity of the Cabernet Sauvignon fruit. The resulting wine reflects both the structured style associated with Stellenbosch Cabernet and the careful craftsmanship of the estate.
Colour:
Deep garnet with rich, concentrated colour and a youthful ruby edge.
Nose:
Aromatic layers of black plum, blackberry and cassis lead the bouquet. Notes of violet, eucalyptus and subtle liquorice add complexity, alongside hints of tobacco leaf and earthiness.
Palate:
Full-bodied with structured but polished tannins. Dark fruit flavours dominate, supported by touches of dark chocolate, graphite and savoury spice. Oak maturation adds texture and depth without overwhelming the fruit.
Finish:
Long and persistent, with lingering dark berries, subtle oak spice and a savoury, earthy note.

Peter Falke Cabernet Sauvignon 2022
- Food Pairing : Peter Falke Cabernet Sauvignon 2022 pairs well with dishes that match its structure and depth. Grilled beef fillet or ribeye steak works particularly well, as the wine’s firm tannins soften alongside the richness of the meat. Lamb chops or slow-roasted lamb shoulder complement the wine’s dark fruit and herbal notes, while dishes such as mushroom risotto or roasted portobello mushrooms highlight its earthy undertones. Mature cheeses like Gruyère or aged cheddar also make a natural pairing, balancing the wine’s structure with savoury richness.
