Knorhoek Cabernet Sauvignon 2022 (Diners)
Cabernet Sauvignon
Description
Knorhoek Estate lies in a quiet valley on the lower slopes of Simonsberg in Stellenbosch, an area widely respected for producing structured Cabernet Sauvignon. The vineyards benefit from well-drained decomposed granite and sandstone soils, combined with a Mediterranean climate where warm days are moderated by cooling maritime breezes from nearby False Bay. These conditions allow Cabernet Sauvignon to ripen fully while maintaining freshness and structure.
The estate itself dates back to 1694, making it one of the historic properties in Stellenbosch. Since its revival under the Gaiduk family, Knorhoek has focused on a deliberately narrow portfolio, specialising in Cabernet Sauvignon and Chenin Blanc grown on the farmâs specific valley sites.
For the Knorhoek Cabernet Sauvignon 2022, individual vineyard parcels were fermented in open-top tanks with regular punch-downs to extract colour and flavour. After extended skin contact, the wine matured for around 20 months in French oak barrels, allowing the tannins to soften while building complexity and structure.
Â
Colour:
Deep ruby red with a dense core and a youthful purple edge.
Â
Nose:
Expressive aromas of cassis, cranberry and dark cherry lead the way, followed by layers of blackberry, graphite and subtle leather. Gentle hints of cedar and spice develop with time in the glass.
Â
Palate:
Medium- to full-bodied with concentrated dark fruit at the centre. Flavours of blackcurrant, plum and sour cherry are supported by firm yet polished tannins. A savoury herbal edge and restrained oak spice add structure and depth.
Â
Finish:
Long and dry, with lingering cassis, cedar and a faint mineral note that reflects the Simonsberg soils.

- Food Pairing : The structure and dark fruit profile of Knorhoek Cabernet Sauvignon 2022 make it a natural partner for richer dishes. It works beautifully with chargrilled sirloin or ribeye, where the firm tannins cut through the meatâs richness. Rosemary-crusted lamb or a slow-cooked beef potjie also pair well, as the wineâs herbal notes echo the savoury flavours of the dish. For a lighter but equally satisfying match, try it with roasted portobello mushrooms or a mushroom and lentil stew, where the earthy elements complement the wineâs cassis and cedar complexity.
