Glen Carlou Gravel Quarry Cab Sauv 2022 (Diners)
Cabernet Sauvignon
Description
At Glen Carlou in the Simonsberg-Paarl foothills, one of South Africa’s distinctive terroirs produces wines with both structure and finesse. The Gravel Quarry Cabernet Sauvignon is named for its single vineyard planted on well-drained, weathered granite and ‘koffieklip’ (coffee stone) soils - conditions that stress the vines just enough to concentrate flavour and natural acidity. Winemaker Johnnie Calitz follows a minimal-intervention philosophy from canopy to cellar: grapes are hand-sorted, naturally fermented, and then carefully matured in 100 % new French oak for about two years. The result is a Cabernet that reflects the estate’s gravelly slopes with depth, clarity and a poised sense of place.
Colour: Deep crimson-garnet, hinting at ripe dark fruit and depth in the glass.
Nose: A layered bouquet of blackcurrant and dark berry compote is supported by cedarwood, mint leaf and subtle dark chocolate aromas.
Palate: Full-bodied yet balanced, with concentrated blackcurrant, mulberry and bramble flavours carried on firm, fine tannins. Integrated oak spice and a touch of earthiness frame the fruit, with lively acidity keeping the wine vibrant.
Finish: Long and confident, with lingering dark fruit, cedar and a hint of tobacco that echoes the wine’s structural backbone.

- Food Pairing : This Cabernet’s structured tannins and lively acidity make it a rewarding partner for richly flavoured dishes. Slow-roasted lamb with rosemary and garlic or grilled beef sirloin will mirror the wine’s depth, while earthy mushroom risotto or herbed venison ragu will highlight its savoury and dark fruit tones. A cheese board featuring mature cheddar or aged gouda also complements the wine’s firm tannic frame and lingering spice.
