Neil Ellis Insignium Cabernet Franc 2019
Cabernet Franc
Description
From Neil Ellis Wines, one of Stellenbosch’s most respected estates rooted on the Helshoogte Pass, the Insignium Cabernet Franc 2019 comes from a south-west facing single vineyard planted on decomposed granite and Table Mountain sandstone soils - sites that lend natural acidity and purity to red Bordeaux varieties. Winemaker Warren Ellis champions site-specific expression and careful oak treatment, letting the distinctive aromatic and structural qualities of Cabernet Franc shine. Extended maturation in French oak adds complexity while preserving clarity of fruit and freshness, aligning with the estate’s philosophy of crafting wines that reflect their origins with finesse.
Colour: Deep, intense ruby-garnet in the glass, indicating concentration and depth.
Nose: Subtle yet expressive aromas of dark and red cherries lead, interwoven with violet florals, perfumed herbs and a gentle hint of dried rosemary and thyme.
Palate: The palate is vibrant and elegantly structured, with bright red berry fruit framed by lively acidity. Herbal nuances and a peppery earthiness unfold alongside subtle spice and fine-grained tannins, giving complexity and balance.
Finish: The finish is long and poised, with lingering red fruit and savoury herbal echoes that reflect Stellenbosch’s terroir.

Neil Ellis Insignium Cabernet Franc 2019
- Food Pairing : With its combination of bright acidity, red fruit purity and savory herbal depth, Neil Ellis Insignium Cabernet Franc 2019 pairs especially well with dishes that complement structure without overpowering subtle flavours. Think grilled lamb cutlets with rosemary and cracked black pepper, where the wine’s herbal notes echo the seasoning, or a roast pork belly with fennel and cherry jus to balance richness with freshness. A mushroom-and-herb risotto or tomato-braised beef brisket also works beautifully - the acidity lifts richer elements, while the wine’s spicy, peppery undertones hold up to intense flavours.
- Drink before: Enjoy now through the next 5–8 years. Structured acidity and tannins support medium-term development.
