Lynx Wine Estate is a family-run boutique winery perched at the foot of the Klein Drakenstein Mountains in Franschhoek, one of South Africa’s historic viticultural centres. Founded in the early 2000s, the estate farms roughly 14 hectares of mainly red varieties, including Cabernet Franc, Cabernet Sauvignon and Shiraz, on well-drained soils that favour concentrated fruit expression and supple tannin development.
Lynx’s philosophy blends old-school craftsmanship with a modern eye for site-specific expression: small batches, hands-on techniques (such as traditional punching down during fermentation), and lengthy oak maturation for reserve wines. Over time, the estate has become known for producing distinctive varietal wines - including Cabernet Franc - that showcase the savoury, aromatic edges of Bordeaux grapes grown in South African sunshine tempered by coastal influence.
Winemaker Pierre Louw, who has steered the cellar since 2018, focuses on letting varietal character and regional character shine, emphasising texture and balance over extraction.
Colour: Deep ruby-garnet with youthful clarity in the glass.
Nose: Aromas of ripe blackcurrant and dark red berries are layered with peppery spice, tobacco leaf and cedar-like oak notes - a hallmark of Cabernet Franc’s aromatic complexity.
Palate: Medium-to-full bodied, with a rich core of black fruit and savoury herb nuances. Tannins are firm but smooth, giving structure without overwhelming, while subtle graphite and cedar add depth and a pleasing savoury thread.
Finish: The finish is long, elegant and savoury-tinged, with lingering berry spice and mineral nuance that invite another sip.

Pair it with grilled lamb cutlets rubbed with rosemary and cracked pepper, where the wine’s herbal and spicy elements complement the meat’s char and richness. It also pairs superbly with beef brisket slow-braised in red wine and herbs, as the wine’s acidity and tannin help cut through the dish’s richness. For a slightly lighter accompaniment, serve with roasted field mushrooms and rosemary polenta — the earthiness of the mushrooms echoes the wine’s savoury spice and round fruit.
