De Toren Private Cellar is situated in the Polkadraai Hills of Stellenbosch, a sub-region widely regarded as one of South Africa’s most promising sites for Bordeaux-style red blends. The vineyards sit on decomposed granite soils with excellent drainage, while cooling breezes from nearby False Bay moderate the warm Stellenbosch climate. These conditions help the grapes ripen slowly, preserving structure and aromatic complexity.
The estate is known for its meticulous blending philosophy. Each Bordeaux variety is vinified separately, allowing the winemaking team to build the final blend with precision. Fruit is hand-harvested and carefully sorted before fermentation, and the wine matures in French oak barrels to develop texture and depth. Fusion V represents the estate’s flagship blend, designed to reflect the balance, structure and ageability associated with classic Bordeaux-style wines, while expressing the richness of Stellenbosch fruit.
Colour:
Deep garnet with an opaque ruby core, showing concentration and youthful intensity.
Nose:
Aromatic layers of blackcurrant, dark plum and cherry lead the bouquet. These are followed by cedar, graphite and subtle tobacco notes, with hints of baking spice and dark chocolate from oak maturation.
Palate:
Full-bodied and structured, with dense black fruit at the centre. Flavours of cassis, blackberry and plum are supported by firm but polished tannins and well-integrated acidity. The different Bordeaux varieties contribute depth and complexity, with Cabernet Sauvignon providing backbone and Merlot adding richness.
Finish:
Long and composed, finishing with dark fruit, cedar and a lingering savoury note.
- Food Pairing : The structure and depth of De Toren Fusion V 2021 make it particularly suited to richer, protein-led dishes. It pairs beautifully with grilled ribeye steak or a classic South African braai of lamb chops, where the wine’s firm tannins and dark fruit complement the savoury richness of the meat. Slow-cooked dishes such as beef short ribs or oxtail stew also work well, as the wine’s concentration stands up to the dish’s intensity. For something slightly lighter, try it with a mushroom and thyme risotto or roasted aubergine - the earthy flavours echo the wine’s savoury undertones while allowing the fruit and structure to remain in balance.
