Chamonix Troika 2022
Bordeaux Blend
Description
The Chamonix Troika 2022 is the flagship Bordeaux-style blend from Chamonix Wine Farm, an estate situated on the steep slopes of the Mont Rochelle mountains in Franschhoek. The property forms part of the historic Huguenot farm La Cotte, first granted in 1688, and today comprises roughly 300 hectares with about 50 hectares planted to vine.
Â
Since the 1990s, owner Chris Hellinger has overseen the replanting of the farm with classic French varieties well suited to the estateâs mountain-influenced terroir. Vineyards planted on south- and south-west-facing slopes benefit from stony, clay-rich soils and cooling breezes descending from the surrounding mountains. These conditions help maintain acidity and aromatic complexity while allowing Bordeaux varieties to ripen fully.
Â
For Troika 2022, the grapes are hand-harvested and berry-sorted before fermentation in a mix of stainless steel, wooden fermenters and concrete tanks. After malolactic fermentation, the wine matures for around 18 months in French oak barrels (about 50% new oak), with each component aged separately before the final blend is assembled prior to bottling.
Â
The resulting wine is structured and layered, combining the aromatic lift of Cabernet Franc with the depth of Cabernet Sauvignon and the richness of Merlot and Petit Verdot.
Â
Colour:
Deep ruby-mulberry with a dense core and youthful brightness in the glass.
Â
Nose:
Aromatic and layered, showing blackberry, ripe cherry and dark plum alongside notes of vanilla, tobacco leaf and forest floor. Subtle oak spice adds complexity without overshadowing the fruit.
Â
Palate:
Full-bodied and structured with ripe, polished tannins. Concentrated dark berry fruit is supported by savoury herbal nuances and hints of cedar and spice. The wine shows both richness and freshness, with Cabernet Franc contributing lift and Cabernet Sauvignon providing backbone.
Â
Finish:
Long and persistent, finishing with dark fruit, gentle oak spice and a lingering savoury complexity.

- Food Pairing : The structure and depth of Chamonix Troika 2022 make it particularly well suited to rich, slow-cooked dishes. It pairs beautifully with braised beef short ribs or oxtail, where the wineâs tannins balance the richness of the meat. Roast lamb with rosemary and garlic echoes the wineâs savoury herbal notes, while venison or game birds highlight its dark fruit and earthy complexity. For a vegetarian option, mushroom and lentil stew or roasted aubergine with tomato and herbs works well, as the wineâs structure complements the dish while the acidity keeps the pairing lively.
