Darling Cellars Black Granite Vintage Reserve 2023
Darling Cellars was established in 1957 and stands as a cooperative icon in the Darling wine district north of Cape Town. Its vineyards sit on ancient granite and decomposed shale soils - particularly the granite of the Darling Hills - where deep roots and maritime influence produce vibrant, concentrated fruit with balanced acidity.
The Black Granite Vintage Reserve range represents the estate’s commitment to crafting premium, terroir-driven wines. The 2023 Vintage Reserve red blend brings together Cabernet Sauvignon’s backbone, Shiraz’s spice and Merlot’s softness. Winemaking focuses on refined extraction and careful oak maturation to round tannins, preserve fruit purity and showcase the cool coastal character of Darling. This is a wine that feels both grounded in site and crafted with thoughtful restraint.
Colour:
Deep ruby-garnet with youthful density.
Nose:
A focused bouquet of blackcurrant, plum and dark cherry, lifted by hints of cedar, violet and a touch of graphite spice. Subtle floral notes and gentle oak spice add complexity without overt heaviness.
Palate:
Medium- to full-bodied with ripe berry flavours - cassis and black plum - supported by layered tannins and a fine structure. Cabernet brings firm backbone and depth, Shiraz adds warm spice and peppery lift, while Merlot contributes plush dark fruit and roundness.
Finish:
Long and lingering, with balanced acidity and a savoury finish threaded with hints of dark fruit and Eastern spice.
- Food Pairing : Darling Cellars Black Granite Vintage Reserve 2023’s structured tannins and layered fruit make it a natural partner to robust dishes. Grilled lamb or beef ribs with rosemary and cracked black pepper echo the wine’s spicy character, while slow-braised beef brisket or oxtail stew complement its depth and savoury fruit core. For a local pairing, a hearty bobotie with fragrant spices brings out the wine’s layered complexity without overwhelming its balance. Mature hard cheeses such as aged cheddar or smoked gouda also sit beautifully with this blend, letting the wine’s textured tannins shine.
