Leopards Leap Pardus 2023
Leopard's Leap is based in Franschhoek and is known for making accessible, food-friendly wines that reflect the diversity of the Cape Winelands. Pardus is a special red blend created by Hein Koegelenberg, named after the Latin word for leopard and inspired by the Cape Mountain Leopard. The wine also reflects Leopard's Leap's long-standing support for the Cape Leopard Trust and its conservation work. The 2023 Pardus brings together fruit from three distinct Cape growing areas. The Merlot comes from Stellenbosch, where the vines are planted in well-drained Tukulu soils; Cabernet Sauvignon comes from bush vines in Paarl; and the Cinsaut is sourced from dry-land bush vines more than 35 years old in Darling. Each variety was hand-picked, hand-sorted and fermented separately before being matured separately in French oak. The Merlot and Cabernet Sauvignon spent 18 months in oak, while the Cinsaut was matured for 12 months, allowing each component to contribute its own character to the finished blend. The wine is made by Leopard's Leap, with Hein Koegelenberg credited as the winemaker for the 2023 Pardus; Renier van Deventer is Leopard's Leap's Head Winemaker.
Colour: Deep ruby red with rich purple tones.
Nose: A layered combination of ripe red and darker purple fruit, with plum, blackberry and red berry notes alongside subtle spice, vanilla and gentle oak.
Palate: Medium to full-bodied, with generous fruit at the centre and a smooth, well-defined texture. Merlot brings softness and ripe plum character, Cabernet Sauvignon adds structure and darker fruit, while the mature Cinsaut contributes freshness and a lighter, savoury edge. Fine, ripe tannins give the wine shape, with oak and spice adding depth without dominating the fruit.
Finish: Long and elevated, with ripe berry fruit, subtle spice and fine tannins lingering comfortably on the palate.
- Food Pairing : The combination of ripe fruit, fine tannins and measured oak makes Leopard's Leap Pardus 2023 particularly well suited to oxtail, lamb bredie, slow-cooked beef and grilled lamb chops. It also works naturally with Cape Malay curry or bobotie, where the wine's ripe fruit and gentle spice complement aromatic seasoning without competing with it. Mature hard cheeses are another good match, particularly where their savoury richness benefits from the wine's freshness and tannic structure.
