Produced in Paarl, Wilderer Distillery was founded by master distiller Helmut Wilderer, one of the pioneers of craft distilling in South Africa. The distillery has become known for combining traditional European distillation techniques with ingredients that reflect the Cape’s unique botanical landscape.
Wilderer Fynbos Gin takes its inspiration directly from the indigenous fynbos biome of the Western Cape. Alongside classic gin botanicals such as juniper and citrus peel, the spirit incorporates carefully selected local herbs and floral elements that bring a distinctly South African character to the glass. Distilled in small batches using copper pot stills, the focus remains on balance and clarity rather than overpowering flavour intensity.

Nose:
Fresh juniper and citrus peel lead the aromatics, followed by layers of wild herbs, soft floral notes and earthy fynbos character. Subtle hints of spice and dried rooibos emerge beneath the brighter aromas.
Palate:
Clean and textured, with classic juniper structure balanced by vibrant lemon zest, soft spice and gently savoury herbal notes. The indigenous botanicals bring complexity and a slightly floral edge without overwhelming the gin’s freshness. The mouthfeel is smooth and refined, making it equally suited to sipping or mixing.
Finish:
Dry and lingering, with notes of citrus oil, mountain herbs and delicate pepper spice carrying through the finish.
